Bacon Wrapped Asparagus

This is a great side dish to go with any meat dish. It’s really easy and quick to put together even on those busy weeknights. The recipe says to wrap the asparagus in bundles of 11 but I like smaller bundles so I make them with 3-5 depending how big the stalks are.
Ingredients
1 1/2 pounds asparagus
6 slices of bacon (I use turkey)
2 Tablespoons olive oil
Salt, Pepper and red chili flakes to taste
2 teaspoons minced garlic
1/4 teaspoon kosher salt
1/4 cup mayonnaise
1 large egg yolk
2 teaspoons fresh lemon juice
Rendered bacon fat & olive oil
- Preheat oven to 400 F
- Separate asparagus into 6 bundles (about 11 stalks per bundle). Cut off bottom 1 inch of asparagus if needed.
- Wrap each bundle on 1 piece of bacon, starting from the bottom of the stalks and working upward.
- Put asparagus on a foil wrapped baking sheet. Season with olive oil, salt, pepper and red chili flakes.
- Bake 20-22 minutes, then broil for a few minutes to allow bacon to get crisp.
- Combine garlic, mayo, egg yolk, rendered fats from the baking pan, salt & lemon juice.
- Mix together well until smooth.
I don’t normally have very much fat from my baking pan since I use turkey bacon but it still tastes great.
