Keto Pancakes

Saturday morning I got up with a craving for pancakes!! So I searched the web and found this recipe. Since this wasn’t planned I didn’t have any lemon on hand so I made them without and I didn’t have any sugar free syrup so we ate them with some all natural peanut butter on top. My husband loved them! This is a real simple easy recipe to follow. You could also add a few blueberries on top with some whipped topping for a sweet treat. Enjoy!!

1/2 cup almond flour
4 oz. cream cheese, softened
4 large eggs
1 tsp. lemon zest
Butter, for frying and serving

Heat skillet or griddle to medium heat with butter. Whisk together the cream cheese and eggs, add almond flour and lemon zest. Mix well and use 1/4 cup measuring cup to add to hot skillet. Cook until edges start to brown and flip. This recipe gave me 8 nice size pancakes.

Add a little turkey bacon and you’ve got a great breakfast.
